This new GEMM retarder proofer cabinet, including a 12-month warranty, is designed for either 600 x 400 mm or 600 x 800 mm trays. Depending on your needs. It features a temperature range of -2 to +35 °C and a modular structure with 75 mm thick panels. Constructed entirely from stainless steel, it offers adjustable humidity from 65 to 90 %. The indirect and soft ventilation ensures optimal conditions. The runners for the trays can be adjusted in position. The trays are not included. The cabinet is delivered assembled and has external dimensions of 78 x 108 x 212 cm (WxDxH).
